Taiwan Da Yu Ling Winter Oolong Tea (大禹嶺)
This is a prestigious high-mountain tea sourced from Taiwan’s highest peaks handpicked in winter. The leaves are tightly rolled and incredibly dense.
Brewing Guide
To capture the signature “mountain breath” and the tender sweetness of winter buds, we recommend a precise Gong Fu-style approach.
Preparation Parameters
• Tea-to-Water Ratio: 6g of tea per 100ml of water.
• Water Temperature: 95°C – 100°C (Use boiling water to help the tightly rolled "winter buds" unfurl).
• Vessel: A pre-heated clay teapot is recommended
Steeping Instructions
Awakening the Leaves (Rinse):
1. Pour hot water over the leaves and discard immediately. This "awakens" the rolled pearls and allows the aroma to bloom.
2. 1st Steep: 50 seconds. This allows the tightly rolled leaves to begin opening gently.
3. 2nd Steep: 40 seconds. The leaves are now open; they require less time to release their peak flavor.
4. 3rd Steep: 55 seconds. Gradually increase the time for subsequent infusions.
Further Infusions: This premium tea can be steeped 4-6 times.
Add 15–20 seconds to each additional steep.
